Perfect with the Lemon Crayon
Ingredients:
- 1 red onion, diced
- 300g quinoa
- 150g cherry tomatoes, halved
- 1/2 cucumber, diced
- 1 avocado, diced
- 200g chickpeas, drained
- A few basil leaves
- Lemon Crayon
Lemon Vinaigrette:
- 2 limes
- 1 1/2 tbsp olive oil
- 1/2 bunch chives
- 1/2 bunch basil
- Salt and pepper to taste
Preparation - Vinaigrette:
- Squeeze the lime juice and mix it with olive oil, salt, and pepper.
- Wash and finely chop the chives and basil, then mix them into the vinaigrette.
Preparation - Salad:
- Rinse the quinoa under cold water until clear.
- Cook the quinoa in boiling water for 15 minutes, then drain and set aside.
- In a bowl, mix the red onions, tomatoes, avocado, chickpeas, cucumber, and quinoa, then pour in the vinaigrette.
- Toss everything together and top with fresh basil leaves.
- Sharpen the Lemon Crayon over the salad for a perfect seasoning.
