Family Recipe by VĂ©ronique Licatese
For 6 people or 2 pizzas (9-inch each)
Ingredients for the dough
- 1 cup warm water
- 1 teaspoon instant yeast
- 1 teaspoon sugar
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon olive oil
Ingredients for the topping
Tomato Sauce:
- Tomato paste
- 3 tablespoons olive oil
- Salt and pepper
- Bay leaf
- Basil leaf
- Sweet pepper
- Cherry tomatoes
- Onions
- Mushrooms
- Ham
- Bacon
- Oregano
- Basil
- Grated mozzarella
Preparation
- In a bowl, mix warm water, yeast, and sugar; let it rest while preparing the rest.
- Mix the flour and salt together.
- Make a well in the dry mixture and add the water-yeast-sugar mix. Stir to combine. Knead by hand or with a food processor. If kneading by hand, do so energetically for about 10 minutes, dusting your work surface to prevent sticking.
- Once the dough forms a smooth, non-sticky ball, place it in an oiled bowl. Cover with a cloth and let it rise for 30 minutes in a warm place. You can also place it in a preheated oven set to Warm, then turned off.
- Once the dough has doubled in size, separate it into 2 balls.
- Roll out the dough and place on 2 oiled pizza trays.
- For the tomato sauce: Heat olive oil in a saucepan, then chop the garlic. Let it sizzle, and add 1 can of tomato paste. Season with salt and pepper. Add a basil leaf and a bay leaf, and let it simmer to reduce into a thick sauce.
- Spread the sauce on the 2 pizza doughs.
- Slice the mushrooms, cherry tomatoes, and sweet peppers.
- Slice the bacon and sauté it in a little oil. Slice the ham.
- Slice the onions thinly and sauté them in 2 tablespoons of olive oil.
- Place the meats and vegetables on the pizzas.
- Sprinkle with oregano and place some basil leaves on top.
- Grate the mozzarella and place it on the pizzas.
- Bake in a very hot oven (450°F).
- Bake for about 15-20 minutes or until the vegetables and cheese are golden brown.
Remove from the oven, slice into wedges, and sharpen the shavings of your Spicy Pepper & Garlic Crayon on each pizza slice. Enjoy!
